A few weeks ago Karlos Arguiñano surprised us on his program by preparing a delicious recipe with our Bimi®. It is a simple, rich and colorful preparation: Bimi® with tagliatelle. We loved this original way to include this superfood in a pasta dish! Don’t worry if you missed it, we have taken very good note of all the steps.
Ingredients
- 400g tagliatelle (fresh pasta)
- 100g of belly
- 100g grated Parmesan cheese
- Extra virgin olive oil
- Pepper
- 300g of Bimi®
- 4 egg yolks
- 4 garlic cloves
- Salt
- Parsley
- Preparation
Heat a little oil in the pan and fry the peeled and sliced garlic. Add the bacon cut into strips and cook for a couple of minutes. In a saucepan, boil water, season and add the Bimi® florets. Cook for 5 minutes and reserve. In another pot, cook the fresh pasta for 3 minutes. In a large bowl, mix the egg yolks with the cheese. Add the pasta and bacon. When the ingredients are well integrated, add a little pepper. We plate the tagliatelle adding the bouquets of Bimi® and decorate with some parsley leaves.
