This month we start with the collection of Col Savoy, also known as Col de Savoya or Col de Milán. It is a very common variety of cabbage in Europe (especially in Central European countries) whose origin we place in Italy.

It stands out for its spherical shape and its characteristic curly leaves, more tender and sweet in flavor than those of the rest of the cabbages. Its dark green color becomes lighter as it penetrates into the heart of the plant.

This product has a large number of properties, rich in vitamins A, C, D, K and many B vitamins. These substances provide multiple benefits to our immune system. They also help maintain healthy skin, our vision to function properly and blood clotting, among other physiological functions of our body. In addition to its abundant vitamins, it also contains many mineral salts such as potassium, iron, calcium, phosphorus, manganese, sulfur and zinc.

It is considered a natural anti-inflammatory. In addition, being rich in antioxidants, it has strong anti-aging power. It also has a direct effect on blood pressure, helping to maintain it on standard regimens.

It is used in the kitchen of many European countries due to its versatility when preparing it. There are several consumption options, for example, raw, to prepare salads or include in sandwiches. Another option is to prepare it pickled with our favorite spices. Browning it in the pan or roasting it in the oven are also good ideas to use it as a garnish for our favorite dishes. Some people prefer to sauté it with pasta, rice or other vegetables to give a different touch to their dishes. The possibilities are endless!

Without a doubt, it is a highly recommended food when it comes to including it in our diet due to all its properties and preparation options.
